Vitamix invited me to sign books for 2-hours at their booth on Day 2 of Expo West. We had a line that was so long the other vendors complained our fans were blocking their booths. Hum…I would have thought they’d be stoked to have a captive audience to sell to.
Even the fire marshall was called in because our line was too long. A good problem to have! I signed 200+ books in 2-hours! (Plus, I signed another 100+ at our reception later that eve.) Thank you Vitamix for generously gifting these books to our friends and fans.

This was the most brilliant display at the Expo. GoRaw simply hydrated their bar, and set it to sprout over time. Perfect demonstration of why raw….raw generates more life. Now, try that with processed cooked food.

After a day of being inside a huge convention center under fluorescent lights, I needed an oxygen infusion. Luckily, I found an oxygen bar, AirHeads, at the Seventh Generation booth, and plugged in for several minutes to recharge.
I ran into many, many other friends including Ryan and Jeremy Black from Sambazon, Frederick from Big Tree Farms, Jane Kim from Sea Tangle Kelp Noodles, my friends at Sequel, ….but unfortunately didn’t get photos with them.

Audra Lowe, the beautiful host of Better TV, invited me to talk about some of the benefits of raw foods. I had so much fun shooting 2 segments in her Connecticut studio back in November. Autumn on the East Coast is so pretty with the changing colors of the leaves. These segments aired nationally on January 12th, 2011.
1) Watch this first segment on the Better TV website where I show you an easy, immune boosting Acai smoothie using my favorite VitaMix blender and Sambazon Acai juice. I also make easy fruit and nut cookies and cobbler.
I was invited to the VitaMix headquarters in Cleveland, OH to shoot a 60-minute DVD that will be included in their latest VitaMix Turbo Blend Variable Speed blender. This was a huge honor for me, as you all know how much I love my VitaMix. My family had an early model in our kitchen from the 70s, so I’ve used the VitaMix my entire life.
The production was shot in a big stadium kitchen where the production crew and VitaMix employees including chefs, food scientists, marketing, and product development filled the stands. I think we shot about 14 or 16 segments in just 2 days! The owner of VitaMix is vegan, so all the recipes are free of dairy and animal products.
Bob Stefanov, the director, was a joy to work with. We had loads of fun and made sure to laugh a lot.
The wonderful team at VitaMix. I am so eager to watch the videos, haven’t seen them yet, and friends were telling me they watched it at the VitaMix booth at Expo West last weekend up on a big screen TV. We’re planning a big launch at Expo West, so make sure to look for me at the VitaMix booth in March in Anaheim, CA.

I was invited onto FOX in San Diego for a 6-minute segment on the benefits of the raw food diet and to talk about the Sambazon Warrior Up Campaign. I made host Raoul Martinez a few smoothies including a Banana Butter Breeze with Cacao. I planned to make him a Tomato Tarragon Bisque, but ran out of time.
This is a book trailer for my latest book Ani’s Raw Food Essentials. In it, I show you how easy it is to make a delicious, fast, raw food Tomato Chili with Taco Nut Meat, from pages 145-146.
Tomato Chili with Taco Nut Meat (bean-free) Makes 4 servings
A vegetable chili made with chopped tomatoes, bell peppers, celery, mushrooms, and corn kernels. Spiced with cumin, and oregano for a real chili flavor similar to the cooked bean version. Top with Taco Nut Meat for an added layer of texture and south west flavor.
3 cups tomatoes, chopped
1 cup red and green bell pepper, chopped
1/4 cup celery, chopped
1/4 cup yellow onion, chopped
1/3 cup mushroom, chopped, any type
1/3 cup corn kernels
1 teaspoon garlic, minced
2 teaspoons chili powder
1 teaspoon ground cumin
3/4 teaspoon dried oregano
1 teaspoon sea salt
1 batch Taco Nut Meat, below
Place all ingredients into a mixing bowl, and mix well. Scoop about 1/3 of the mixture into blender and puree. Scoop puree back into mixing bowl.
To serve, scoop into 4 serving bowls. Top with Taco Nut Meat, and enjoy.
Taco Nut Meat Makes about 1 cup
Walnuts are ground and spiced with cumin and coriander to make this taco flavored nut meat crumble. Use it to top salads, soups, and inside wraps to add taco flavor and texture.
1 cup walnuts
1 tablespoon extra virgin olive oil
1 tablespoon cumin, ground
2 teaspoons coriander, ground
1 teaspoon Braggs or Nama Shoyu
1/4 teaspoon sea salt, to taste
Place walnuts into food processor, and process into small pieces. Add remaining ingredients, pulse to mix well.
Will keep for 1 week in fridge.

Cauliflower is one of my favorite vegetables, and it was abundant at the farmers’ market today. So, I picked up a big, beautiful head to whip up my mash for dinner. Cauliflower comes in white, green, and purple varieties, and works wonderfully processed into a mash. This is my version of mashed potatoes. Cauliflower has a kick to it, which I love. But if it’s too strong for you, try the following trick:
To soften the kick of raw cauliflower, process on it’s own first with 1 cup of filtered water. Strain through a cheese cloth or nut milk bag. Some of the pungent flavor will run off with the water. Or, you can also substitute with broccoli, which is much milder.
Serve with a gravy on it’s own, or alongside your favorite recipe(s).
Cauliflower Mash Makes 4 servings, about 4 cups
To keep your mash lighter in color, you can use white miso paste. I used a red paste, and it was still light in color. I added a touch of olive oil, but for even more creaminess, I use avocado. Avocado creates spots of slight green, which I don’t mind, since I love the color green. Besides, the gravy will cover it up anyways.
I used to use Psyllium Seed Husk powder in this recipe, but this batch didn’t seem to need any stiffening up, so I skipped it. If your mash is too runny, add a teaspoon at at a time, up to a tablespoon, of Psyllium to thicken.
1 head cauliflower, broken into small pieces, about 6 c
1/4 cup avocado, cubed
2 tablespoons miso, any unpasteurized color
1 teaspoon garlic, minced
1/4 cup lemon juice
2 tablespoons olive oil
2 teaspoons thyme or sage, dry
Place all ingredients into your food processor. Process until smooth.
