Peach & Pistachio Cobbler

CRUST

• ½ cup shelled pistachios
• ¼ teaspoon salt
• 1 cup Medjool dates

FILLING

• 4 cups sliced peaches
• 3 tablespoons agave nectar
• 1 vanilla bean
