Let me show you how simple it is to cut uniform cubes with potato and carrot in this video I shot with Vegetarian Times Magazine. Wardrobe provided by my favorite eco luxury designer Linda Loudermilk.

One of my favorite foods is cabbage because it’s super versatile, has hardly any calories, is free of wheat and gluten, is great for digestion, and is beautiful in color (purple and green). It tastes awesome in salads, gives us valuable probiotics as pickled sauerkraut, plus it works perfectly as a “shell” to be stuffed with yummy fillings to make a delicious hand held treat. I’m currently reintroducing heart-healthy fats into my diet from flax and chia seeds (omega-3), some nuts (vitamin E and antioxidants), and olives to keep my skin supple and moist, especially now that autumn is upon us. I picked up a bunch of avocados at the Farmers’ Market, but am disappointed they didn’t make it into my bag!

Ani’s Raw Food Asia + Vegetarian Times Magazine: How to Chiffonade

I first filled up my purple cabbage shell with Chiffonade green cabbage. Next, I layered on a Black Olive Tapenade, from Ani’s Raw Food Kitchen, page 155,  and Candied Onions, inspired by my Buckwheat-Battered “Fried” Onion Rings, from page 116 of Ani’s Raw Food Essentials, plus I added maple syrup to sweeten the onions. I then topped it all with artichoke hearts, and would have added avocado, if I had some on hand.

Black Olive Tapenade
makes 4 servings

  • 1/2 teaspoon garlic, minced, about 1 clove
  • 1/2 cup black olives, pitted
  • 1/2 cup green olives, pitted
  • 1 to 2 tablespoons extra virgin olive oil
  • 1 tablespoon thyme, fresh
  • 1 teaspoon rosemary, fresh
Place all ingredients into food processor, mix well.
Will keep for a week or longer stored in fridge.

Candied Onions
makes 4 servings 

  • 4 cups thinly sliced sweet onion, about 1 whole
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons tamari or nama shoyu (raw soy sauce), to taste
  • 1 tablespoon agave or maple syrup, to taste

Place all ingredients into mixing bowl. Set aside to marinate and wilt for at least 10 minutes. Add syrup to your liking. I choose to make this sweet! Squeeze excess liquid before using.

Will keep for several days in fridge.

On May 19. 2011 I got to visit Seattle along my tour for Ani’s Raw Food Asia. First stop was with host Margaret Larson at King 5 TV’s NewDay Northwest Show. Everyone in the studio audience received a copy of Ani’s Raw Food Asia.

Next was Evergreen Radio’s Kitchen Corner Show where I had a pleasantly challenging conversation with host Jo Ann Henderson. Jo was skeptical at first, but I hope I was able to convince her that raw foods are simply a way to enjoy more whole, fresh, organic ingredients.

At the same time, another pre-recorded radio program aired on Seattle radio where I spoke with host Keesha Ewers on her Healthy You! Radio Show.

By lunch I was hungry for some local raw food treats, and we stopped at Thrive Cafe for a meet-and-great and book signing, and they fed me delicious salad, green juice, and desserts.

Next stop was KOMO Newsradio where we aired during afternoon drive-time traffic. The hosts Herb Weisbaum & Jane Shannon are already into raw foods, and were already making their own kale chips. I love how main stream kale chips have become!

Our final destination for the day was the Woodmark Hotel and Yacht Club in Kirkland, on the lake. This was the view from my room, you can see snow topped mountains in the distance.

The Woodmark Hotel hosted what they call “Happy Hour and a Half”. They made 2 recipes from Ani’s Raw Food Asia, I gave a talk, answered questions, and then signed books. It was another clear, sunny, dry, warm day in the Seattle. After this final event, I went on a long walk along the lake front. The air was fresh, clean, and crisp. And I felt grateful for all the wonderful people who welcomed me to their beautiful city.

This was the awesome lady who made this day happen for me, Joy. In addition to shuttling me around town, she also hooked me up with a food assistant so that I didn’t have to carry all my food, plates, props with me on the airplane! Plus, she kept the car stocked with cut, prepared veggies of all sorts for me to snack on all day long.

This was Joy’s assistant Lee, who had shopped for props and ingredients, and helped me prep for my TV appearance. Thank you Joy and Lee!! You’ve officially spoiled me.

I was invited to visit 105degrees in Oklahoma City by owners Chef Matthew Kenney and the lovely Dara Prentice. I taught a public class on Tuesday evening July 13th to a packed room of ladies, spoke to the Academy students on the 14th, and then hosted a sold out RAWkstar Dinner event later that evening.

It was an amazing trip, I love Oklahoma City. Everyone was super warm and inviting. And, I was even surprised by a delivery of a bouquet of balloons from 3 ladies the following day! The card read “Thank you for a thrilling evening last night”….which could potentially sound strange taken out of context. Ha haaa.

I’m so grateful to have amazing friends like Dara and Matthew who create so much good in our world! Thank you Dara and Matthew for all of your inspiration, love, and beauty! xoxo

A book trailer for Ani’s Raw Food Essentials for a naturally effervescent probiotic drink called Water Kefir from page 56.

This healthy drink is simple to make using water kefir grains that you can purchase online. I include resources in my book, and recommend going straight to the source for the living grains. Avoid the processed, dried, packaged grains because they are not as vital as the living grains. Plus, the dry grains only brew maybe three batches before you have to go and buy more dried grains again.

It takes just 48 hours to brew Water Kefir, and it’s full of friendly bacteria for building healthy intestinal flora. It helps me with digestion, assimilation of nutrients, and elimination. I enjoy Water Kefir with and after meals to help with digestion. I drink a cup on an empty stomach before bed to balance my intestinal flora.

In this video, I use a variation of the recipe in my book.

Water Kefir
Note: avoid metal. Metal damages probiotics and water kefir grains. Use only plastic spoons, measuring cups, and glass jars.

  • 4 cups filtered water
  • 1/3 cup organic cane juice crystals (sugar)
  • 1 Tablespoon turbinado (brown)
  • 2 pieces ginger
  • 3 slices dried pear (unsulphured)
  • 1/4 cup water kefir grains

Place water into a glass jar. Add sugars, ginger, pear, and stir. Add grains. Close lid, and store in cabinet for 48 hours to brew.

Pour brew through a plastic sieve to catch the grains. Remove ginger and pear. Store brew in glass bottles at room temperature to increase vitamin B levels. Or, store in fridge to chill.

Start your next batch immediately.

This is a book trailer for my latest book Ani’s Raw Food Essentials. In it, I show you how easy it is to make a delicious, fast, raw food Tomato Chili with Taco Nut Meat, from pages 145-146.

Tomato Chili with Taco Nut Meat (bean-free)
Makes 4 servings

A vegetable chili made with chopped tomatoes, bell peppers, celery, mushrooms, and corn kernels. Spiced with cumin, and oregano for a real chili flavor similar to the cooked bean version. Top with Taco Nut Meat for an added layer of texture and south west flavor.

  • 3 cups tomatoes, chopped
  • 1 cup red and green bell pepper, chopped
  • 1/4 cup celery, chopped
  • 1/4 cup yellow onion, chopped
  • 1/3 cup mushroom, chopped, any type
  • 1/3 cup corn kernels
  • 1 teaspoon garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 3/4 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1 batch Taco Nut Meat, below

Place all ingredients into a mixing bowl, and mix well. Scoop about 1/3 of the mixture into blender and puree. Scoop puree back into mixing bowl.

To serve, scoop into 4 serving bowls. Top with Taco Nut Meat, and enjoy.

Taco Nut Meat
Makes about 1 cup

Walnuts are ground and spiced with cumin and coriander to make this taco flavored nut meat crumble. Use it to top salads, soups, and inside wraps to add taco flavor and texture.

  • 1 cup walnuts
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon cumin, ground
  • 2 teaspoons coriander, ground
  • 1 teaspoon Braggs or Nama Shoyu
  • 1/4 teaspoon sea salt, to taste

Place walnuts into food processor, and process into small pieces. Add remaining ingredients, pulse to mix well.

Will keep for 1 week in fridge.

In this video I’ll show you how to make a beautiful, delicious, refreshing ice cream using cashews with folded in pineapple, and shaped into a cake form. This raw food demo was recorded during my workshop at Mom Tri’s Villa Royale in Phuket, Thailand on January 24, 2010.

Pineapple Ice Box Dessert
(fills one loaf pan to make about 8 servings)

Crust

  • 1 1/2 cups cashews
  • 1 vanilla bean, scraped
  • 2 Tablespoons honey or agave syrup

Filling

  • 1 1/2 cups cashews
  • 1/3 cup honey or agave syrup
  • 1/4 cup coconut oil, liquid
  • 2 1/2 cup cored and chopped pineapple

Make crust by processing cashews into small pieces with vanilla. Add honey, and process to mix well. Sprinkle half of the crust mixture into bottom of a loaf pan,

To make filling, in high-speed blender, blend cashews with honey or agave and liquid oil into a smooth cream. Into a mixing bowl, toss cream with pineapple to mix well. Scoop into loaf pan. Top with remaining crust, and gently press down.

Freeze dessert overnight or until frozen.

This is a video shot during my workshop at Mom Tri’s Villa Royale in January. In it, I’ll show you how easy it is to make delicious, nutritious Thai Spring Rolls with an Almond Dipping Sauce. My yummy, super healthy, raw food version of a peanut inspired sauce is made using kaffir lime leaves, chilies, and almonds. The rolls are made by filling collard leaves with julienne zucchini, mung bean sprouts, and fresh herbs like cilantro, mint, and basil.

Thai chilies are spicy hot, so you’ll want to adjust the spice level to suit your tastes. Removing the seeds will help to decrease the spice level. Capsicum is what makes chilies hot, and is the ingredient found in most diet pills for its metabolism boosting properties. Capsicum increases circulation, decreases inflammation, and boost our immune system.

Thai Spring Rolls with Almond Dipping Sauce
(makes 4 servings)

Thai Dipping Sauce

  • 1/4 cup olive oil
  • 4 kaffir lime leaves
  • 1 Tablespoon Nama Shoyu
  • 2 Thai red chilies, to taste
  • 1/2 cup + 2 Tablespoons  raw almonds
  • 1 lemon’s juice
  • 1 cup water,  as needed

Fillings

  • 1 zucchini, julienne
  • 1 cup mung bean sprouts
  • 1/2 bunch basil, de-stem
  • 1/2 bunch cilantro, de-stem
  • 1/4 bunch mint, de-stem
  • 1-2 Thai chili, finely chop

Wrapper

  • 3 large collard green leaves, de-stem and half

To make dipping sauce, place sauce ingredients into your blender, adding water as needed. Blend smooth.

To wrap, place leaves onto flat surface. Layer with fillings, and roll.

Serve with dipping sauce.

Makeup works wonders, and each time I work with a makeup artist, I learn new ways for applying looks. Martin Christopher does makeup for the Playboy Bunnies, and I loved what he did with me eyes and hair.

To get as much of the counter and ingredients into our shots, I had to stand as low to the counter as possible. That meant standing with my legs straddled for hours…quite the thigh workout.

Skye Van Raalte-Herzog (producer), Todd Stevens (exec producer), and Aaron Lee (camera) were great at giving me feedback and direction. They’ve obviously done these shoots many times before and really knew what would work well on camera. They were an awesome team to work with.

A behind-the-camera perspective photo shot by my assistant Jules Castillo. Jules helped us to set up the kitchen for our shoot, then he helped me prep my ingredients too. Great assistants like Jules are wonderful to have around on shoots and projects.

Everyone enjoyed eating up all the food after the shoot. It’s always fun to watch reactions to my food when folks try it for the first time. Skye enjoys lots of raw foods already, but Todd was blown away at how simple and delicious everything was. Thank goodness he loves nuts, since both dishes used walnuts, almonds, and brazil nuts.

I had a birthday celebration to attend last night after the video shoot. Sweetie Martin made sure my hair and makeup were perfect for my evening out. What did I tell you….Playboy hair! I felt like an LA hottie. That is one of the many things I love about LA. You can never be too over or under dolled up.
